Rumari at Raffles Bali

Located at the luxurious Raffles Bali, Rumari is a culinary gem that marries the rich flavors of Indonesia’s regional cuisine with the elegance of French culinary techniques.



At the helm of this ocean-view restaurant is Executive Chef Gaetan Biesuz, a French native with a deep appreciation for Asian ingredients and flavors. Hailing from Lyon, where he honed his craft in a prestigious two-Michelin-starred brasserie, Chef Gaetan brings a wealth of experience to his role. His culinary journey has taken him through some of the most luxurious restaurants in Thailand, Singapore, Malaysia, and Indonesia.


The atmosphere at the restaurant is elegant and beautiful. Perched on the highest level of the resort where the sea meets the mountains, it offers a stunning view of the entire estate. Guests can choose to dine indoors with cool air conditioning or on the outdoor terrace.




If you prefer the terrace, it’s recommended to make a reservation early, especially before sunset. Booking a dinner reservation around 5:30 p.m. allows you to enjoy the sunset over the sea and the evolving scenery as day turns to night. A key pleasure of dining at this restaurant is the breathtaking view.



The service, matching the esteemed reputation of the Raffles Hotel Group, is excellent, ensuring a seamless experience with both wine and food service.



Chef Gaetan follows the culinary philosophy of "80:20." He primarily uses ingredients sourced from various regions of Indonesia, though achieving 100% local sourcing for fine dining can be challenging. Despite this, the majority of ingredients are locally discovered and utilized from across Indonesia, including Bali. When necessary, international ingredients such as caviar and Wagyu are used sparingly, up to a limit of 20%. This approach maintains high standards while promoting sustainability.




Also in 2022, Rumari was honored to become a Krug Ambassade, joining an elite group of establishments worldwide and becoming the first and only ambassador in Indonesia to embody the craftsmanship and passionate spirit of the House of Krug. Additionally, Rumari earned Wine Spectator's 2022 Award of Excellence for its meticulously curated wine collection, which showcases both quality and diversity with selections from around the globe.
