Chef Ton is no stranger to the global culinary stage. A graduate of The Culinary Institute of America and a former apprentice at Michelin-starred restaurants like Eleven Madison Park and Jean-Georges, his international pedigree is impressive. Yet, his heart remains tethered to Thailand. Returning to his homeland, he sought to reimagine Thai cuisine by blending contemporary techniques with the essence of traditional flavors.


Nusara, named after his late grandmother, is a deeply personal project. It is an ode to her memory, her cooking, and the legacy of home-cooked meals that she lovingly prepared for her family. Chef Ton describes her as the person who first ignited his passion for food. With Nusara, he honors her by presenting Thai cuisine in a refined, intimate setting, blending nostalgia with innovation.



The Concept: Bridging Past and Present

Unlike the bustling vibe of his other establishments, such as Le Du (another of his Bangkok-based triumphs), Nusara takes on a more reflective and intimate tone. Situated in a shophouse near the Chao Phraya River, the restaurant accommodates only 10 diners at a time, creating an atmosphere akin to being a guest in a private home.


The concept revolves around elevating humble Thai flavors into a multi-course tasting menu that rivals the sophistication of the world's best fine-dining experiences. The dining room—elegant yet understated—features muted tones, warm lighting, and minimalist decor that allows the food to take center stage. Every plate tells a story, paying tribute to Thailand’s culinary heritage while simultaneously pushing its boundaries.



A Journey Through Thai Heritage

The tasting menu at Nusara is a meticulously choreographed journey through 12 to 14 courses. Chef Ton combines heirloom recipes with contemporary techniques, highlighting local ingredients in ways that are at once unexpected and profoundly familiar. The experience begins with a series of amuse-bouches that set the tone for the evening. It’s a vivid introduction to Nusara’s philosophy: rooted in tradition but elevated with modern flair.


Another standout is the blue crab curry, a dish that pays homage to the rich, creamy curries Chef Ton remembers from his grandmother’s kitchen. The crab is delicately poached and served with a fragrant coconut milk reduction, spiced with hand-pounded curry paste. The accompanying crispy roti serves as the perfect vessel for scooping up every last drop of the velvety sauce.



Chef Ton occasionally steps out of the open kitchen to interact with guests. He speaks of the dishes not as mere culinary creations but as chapters of his life—from childhood memories to his journey through international kitchens and back to Bangkok.
