Only the top 1% (BMS No9) are chosen, acquired whole at a daily auction, and entrusted to the skilled hands of an artisan butcher. Byeokje Galbi actively participates in daily auctions in Majang-dong, procuring an average of two Korean beef cattle per day. While the primary source of their beef is from Pocheon, Hoengseong, and Dongducheon, regions known for producing beef with excellent gravy-holding qualities, Korean beef from other areas is also acquired. Following the procurement process at the auction site, the Korean beef is then distributed to various restaurant brands operated by Byeokje Galbi and its individual branches.


Among the various branches, Byeokje Galbi the Cheongdam stands out as the high-end establishment where patrons can relish both an Omakase-style course menu and à la carte options in the privacy of a dedicated room.
